Vegan-friendly home-made pancake

Make your own delicious pancake couldn’t be easier!
This beautiful stack of vegan-friendly pancakes are ready to be boosted with some honey, blueberries, banana, cocoa powder and cinnamon.
Here is the recipe:
200 g rye flour
100 g buckwheat flour
4 tbsp healthier sugar alternative
(I used 2 tbsp xylitol and 2 tbsp coconut sugar)
3 tsp baking powder
1 tsp salt
600 ml coconut milk
75 ml olive oil
I mixed the liquids first, then added sugar, baking powder, salt and then little by little the flour.
Let it rest for 15-20 minutes.
I like to oil the pan before every pancake.
(Note: Any flour works, not only rye and buckwheat. You can use 300g of whatever flour you have at home)
They turned out to be very tasty even without any toppings ðŸ˜‹
